Spectacular Healthy Pancakes with Chocolate Chips



Pancakes, they are, home-made, hot, delicious and so satisfying. We love pancakes in my house. We eat them at least once a week for dinner and then save them in the freezer to warm in the morning for breakfast too. So after much discussion on Twitter about my pancakes, I am going to share the secret recipe with you.

Whole Wheat Sunspire Grain-Sweetened Chocolate Chip Fudge Fantasy Pancakes
3 cups of Whole Wheat Flour
3 cups of Skim Milk
3 Eggs
1 Tablespoon of Fudge Fantasy from Wax Orchards
3 Teaspoons of Vanilla Extract
3 Teaspoons of Baking Powder
Sunspire Grain Sweetened Chocolate Chips

Put all ingredients in Bowl. Take Electric Mixer and mix ingredients together till batter is smooth. Warm up the stovetop on high with griddle and spray High Heat Canola Oil to grease the skillet. Pour pancakes into griddle, you can do any size you like. We like them small to medium sized. Put as many chocolate chips you want in your pancake. We do about 8 chips.

Lower the heat to medium and then as soon as the pancakes bubble, flip over. Give them another 45 seconds and then they are done! Eat immediately, before it gets to the plate or let it cool, freeze them in the freezer separated by wax paper (so they don't stick together) and eat frozen (BEYOND DELICIOUS FROZEN) or warm in toaster oven.

You can use the same recipe for waffles but I have not had success with a waffle iron that doesn't not stick.

These pancakes have no artificial sugar, no salt, no junk. Just good healthy food. Give them a try. We love them.
